Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Coral and spawn
Gives the sauce its rich colour and a deep lobster flavour.
Butter
Adds fat for a smooth, rich texture and carries the flavour.
Water or vinegar
Thins the butter and adds a slight acidity that brightens the sauce.
Prepared mustard
Adds sharpness and helps emulsify the butter into the sauce.
Lobster meat
Adds chunks of sweet lobster texture if included.

The step that matters

Stir the coral into the warm butter until smooth. Butter and water separate easily when they cool or overheat. Stirring the coral mixture in while the butter is warm and well combined, with the mustard acting as an emulsifier, helps keep the sauce smooth rather than greasy or broken.

Swap the mustard
