What each ingredient does

Cucumbers
Provide the crisp body of the pickle, which the brine and vinegar then flavor.
Cider vinegar
Adds the acidity that preserves the cucumbers and gives the pickle its sharp flavor.
Coarse sea salt
Draws water out of the cucumbers and seasons them during the brining stage.
Horseradish root
Contributes a pungent, sharp heat that flavors the vinegar.

The step that matters

Scalding the vinegar and pouring it over the cucumbers. The vinegar must be hot when poured so the cucumbers and spices infuse quickly and the jars seal well. Pouring cool liquid would give a weaker flavor and a less reliable seal.
