Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the corn and flour together and help the fritters set as they cook.
Flour
Thickens the batter so it holds together in the hot fat instead of spreading.
Baking powder
Releases gas in the batter so the fritters puff and stay light.
Green corn
Supplies the main body, sweetness and flavor of the fritters.
Lard
Fries the outside to a golden brown crust while keeping the inside tender.

The step that matters

Drop spoonfuls of the corn mixture into the hot fat and fry until light brown.. If the fat is not hot enough, the batter absorbs oil and turns greasy and heavy. Frying until light brown sets the crust while the centre cooks through.
