Strawberry Short-cake

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the dough

  1. Preheat the oven to 400°F (200°C).

  2. In a bowl, mix flour, baking powder, and sugar.

  3. Cut in the butter until the mixture resembles coarse crumbs.

  4. Divide the dough in half and roll each half to fit a biscuit tin or pie tin.

  5. Spread soft butter on the bottom crust and place the top crust over it.

  6. Repeat with the second half of the dough.

Bake and assemble

  1. Bake until golden brown, then remove from the oven.

  2. Separate each shortcake by cutting through the buttered layer.

  3. Butter each crust generously and place the bottom on serving plates.

  4. Mix strawberries with sugar and cover the shortcakes with them.

  5. Pour any remaining juice around the cake and serve with sweet cream.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

All-purpose flour
Forms the structure of the shortcake crumb as its proteins set in the oven.
Butter
Cut into the flour to create a tender, flaky texture and adds richness.
Baking powder
Releases gas in the oven so the shortcake rises and becomes light.
Strawberries
Provide fresh fruit flavour, moisture, and sweet-tart acidity to the dessert.
Sugar
Sweetens the shortcake and, when mixed with strawberries, draws out their juices.

The step that matters

Cut in the butter until coarse crumbs. Butter must stay cold-to-soft and be cut into small pieces, not fully blended, so pockets of fat melt in the oven and create a tender, flaky layered texture rather than a dense one.
