Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Layer the rhubarb in a pie dish, nearly an inch deep.

  3. Sprinkle the sugar, salt, nutmeg, and a little flour over the rhubarb.

Assemble and bake

  1. Cover with a rich pie crust and cut a slit in the center. Trim the edges with a sharp knife.

  2. Bake until the pie loosens from the dish.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rhubarb
Provides the tart flavour and the bulk of the filling.
Sugar
Sweetens the tart rhubarb and helps draw out its juices.
Flour
Thickens the juices released by the rhubarb as the pie bakes.
Rich pie crust
Forms the enclosing pastry that holds the filling while it bakes.

The step that matters

Sprinkle the sugar, salt, nutmeg, and a little flour over the rhubarb.. Flour must be evenly distributed among the rhubarb pieces so the juices thicken rather than pooling as a runny liquid under the crust.

Swap the nutmeg

How well each one fits the dish's main ingredients (rhubarb, sugar, flour):
