Ice Cream and Ices
Ingredients
Directions
Pack the ice and salt in a container, using about ¾ ice and ¼ salt.
Beat the custard for 5 minutes until smooth.
Cover the container and add ice and salt on top.
Cover the whole container with a thick mat, blanket, or carpet and let it stand for 1 hour.
Uncover and scrape the frozen custard from the bottom and sides of the container.
Beat the custard again until it becomes a smooth, half-congealed paste.
Cover the container again with ice, salt, and a blanket, and let it sit for 5 to 6 hours, replenishing ice and salt as needed.
