Why it works: Pear and quince match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 133 recipes. Both carry ethyl isobutyrate, which smells fruity, ethereal. The science ↓

Canned Fruits

Ingredients

Directions

  1. Strew sugar over the fruit and let it sit for a few hours.

  2. Scald the fruit with the sugar until the sugar penetrates.

  3. For harder fruits, boil longer until tender.

  4. Prepare glass jars by placing them in a tin pan of hot water.

  5. Fill the jars with boiling hot fruit, sealing them tightly with heated tops.

  6. Occasionally tighten the tops as the fruit cools and shrinks.

  7. Store jars in a dark, cool, dry place.
