What each ingredient does

Egg white
Whipped into a stiff foam that gives the frosting its structure and body.
Powdered sugar
Stiffens the whipped egg white into a frosting that holds its shape.
Maple sugar
Boiled with water to form a syrup that flavours the walnuts with sweet maple taste.
Walnut meats
Main ingredient that is dipped in syrup and filled with frosting.

The step that matters

Pressing the frosting between the walnut halves. If the frosting is too loose it will not hold its shape or harden properly. Whipping the egg white to a stiff foam and adding enough powdered sugar gives a frosting firm enough to stay in place as it sets.
