Why it works: Thyme and pepper are a kitchen classic. They rank in the top 4% of all ingredient pairs, and cooks put them together in 11,585 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓
Veal Pudding
Ingredients
Directions
Prepare the filling
Melt the butter in a clean frying pan over low heat.
Add the veal, bacon, thyme, pepper, and salt; cook for about 10 minutes.
Stir in the warm water, bring to a boil, then let it cool.
Assemble and cook
Line a pudding-disk with the suet crust.
Place the veal and bacon mixture in the disk and pour the gravy over it.
Roll out the paste to form a lid, place it on top, and seal the edges with your thumb.
Tie the basin in a pudding cloth and place it in a saucepan of boiling water.
Keep boiling for about 1 hour until done.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Veal
- Forms the main meat filling, becoming tender as it cooks gently in liquid.
- Bacon
- Adds fat and savoury flavour that seasons the veal and gravy.
- Butter
- Adds richness and helps brown the veal at the start of cooking.
- Suet crust
- Forms the pudding's outer casing that holds the filling during steaming.
The step that matters
Keep the pudding boiling for the full hour. If the water stops boiling, the pudding cooks unevenly and the suet crust can turn heavy. Steady heat and enough water keep the pudding cooking through.
Swap the thyme
How well each one fits the dish's main ingredients (veal, egg, butter, pepper):
- Parsleyfits better
- Sagefits better
- Nutmegfits better
- Thymethe original
Fit is the average pairing score against veal, egg, butter, pepper. Candidates are from the same food group and used in at least 100 recipes.
