What each ingredient does

Tart apples
Provide the main body and pectin that thicken the sauce as it cooks down.
Sugar
Adds sweetness and helps balance the sharpness of the vinegar and apples.
Vinegar
Adds acidity that gives the ketchup its tang and helps preserve it.
Onions
Add savoury depth and body to the sauce as they soften during boiling.

The step that matters

Boiling for one hour. A long, steady boil reduces the sieved apple mixture into a thick sauce and concentrates its flavour. Stopping early leaves it thin and more likely to spoil in the bottle.

Swap the onion

How well each one fits the dish's main ingredients (apple, sugar, pepper, clove, mustard, cinnamon, vinegar):

  1. Horseradishfits better
  2. Capsicumfits better
