What each ingredient does

Cucumbers
Form the pickle itself; salting and drying firm them and reduce their water before pickling.
Coarse sea salt
Draws water out of the cucumbers, firming them and helping preserve the pickle.
Vinegar
Acidity that preserves the cucumbers and gives the pickle its sour flavour.
Ginger
Adds a warm, aromatic spice flavour to the pickling liquid.
Turmeric
Gives the pickling liquid a yellow colour and a mild earthy flavour.

The step that matters

Sun-dry the cucumbers until moderately dry. Removing surface and internal water before pickling keeps the cucumbers firm and stops the vinegar from being diluted, so the pickles stay crisp rather than soft.

Swap the ginger
