Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Form the main body of the pickle and absorb the flavour of the vinegar brine.
Vinegar
Acidic brine that preserves the eggs and gives the pickle its sharp taste.
Mustard seed
Adds pungent, sharp heat that mellows during the long steep.
Green peppers
Add crisp texture and a fresh, vegetal bite against the soft eggs.

The step that matters

Let the jar steep for 8 to 10 days. The vinegar needs time to penetrate the eggs and carry the spices through the whites and yolks. Opening early leaves the eggs under-flavoured and less safely preserved.

Swap the garlic

The recipe marks garlic as optional. How well each one fits the dish's main ingredients (egg, vinegar, white pepper, allspice, ginger, mustard, horseradish):

  1. Tarragonfits better
  2. Turmericfits better
  3. Dillfits better
  4. Garlicthe original

Fit is the average pairing score against egg, vinegar, white pepper, allspice, ginger, mustard, horseradish. Candidates are from the same food group and used in at least 100 recipes.
