Cayenne Cheese Straws

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the dough

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, mix flour, butter, parmesan cheese, salt, and cayenne pepper.

  3. Add the egg yolk and mix into a paste.

Shape and bake

  1. Roll out the paste to about ¼ inch thick and cut into strips 4-5 inches long and ⅓ inch wide.

  2. Twist each strip like a paper spill and place on a lightly floured baking sheet.

  3. Bake until crisp but not browned.

Serve

  1. Let cool and serve cold on a glass dish.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Adds fat that makes the dough rich and tender.
Parmesan cheese
Adds savory flavor and helps the straws brown and crisp slightly.
Egg yolk
Binds the dough together into a paste.
Flour
Provides the structure that holds the straws together as they bake.

The step that matters

Bake until crisp but not browned. Baking too long lets the cheese and butter darken and turn bitter, and the straws can become hard instead of crisp.

“What each ingredient does” and “The step that matters” were written by Claude from this recipe’s own method and reviewed in samples by CompKitchen.
