Minced Fowls on Toast

Ingredients

Directions

Prepare the gravy

  1. Remove all meat from the bones of the fowl and keep it covered.

  2. Boil the bones and skin in ¾ cup of water until reduced by half.

  3. Strain the gravy and let it cool, then skim off the fat.

Make the sauce

  1. Combine the gravy, ½ cup of cream, 3 tablespoons of butter, and 1 tablespoon of flour in a clean saucepan. Stir until boiling.

  2. Add the minced fowl and chopped hard-boiled eggs, seasoning with salt and pepper. Heat the mixture until ready to serve, then dish it over hot toast.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Fowl meat
Provides the main body and savory flavor of the minced filling.
Butter
Adds richness and fat that carries flavor and gives the sauce a smooth texture.
Flour
Thickens the gravy and cream into a smooth, stable sauce as it cooks.
Cream
Adds richness and body, softening the sauce's texture.
Hard-boiled eggs
Add body and a soft, creamy texture to the minced mixture.

The step that matters

Skim the fat after straining the gravy. Fat left in the gravy can separate and make the sauce greasy or broken. Chilling and skimming removes it so the flour-thickened sauce stays smooth.
