Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Wash the huckleberries in a basin of water and remove any floating debris.

  2. Pick out the stems and unripe berries, then place the cleaned berries in a dish.

  3. Grease a pie dish and line it with pie paste.

Assemble and bake

  1. Fill the dish with the huckleberries, about ½ inch deep.

  2. Sprinkle the brown sugar, flour, coarse sea salt, and grated nutmeg over the berries.

  3. Cover the pie with a top crust, making a slit in the center or several small incisions on the sides.

  4. Press the edges of the crusts together and trim with a sharp knife.

  5. Bake in a preheated oven at 400°F (200°C) for 45 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Huckleberries
Provide the main fruit filling and its juice, which sets as the pie bakes.
Brown sugar
Adds sweetness and moisture, and helps the berry juices become syrupy.
Flour
Thickens the berry juices so the filling holds together when cut.
Pie paste
Forms the crust that holds the filling and browns in the oven.

The step that matters

Cutting vents in the top crust. Steam from the bubbling berry juices must escape through the slit or incisions. Without vents, pressure can split the crust and make the filling soupy.

Swap the nutmeg

How well each one fits the dish's main ingredients (butter, sugar, flour):

  1. Cinnamonfits better
  2. Jalapenofits better
  3. Nutmegthe original
  4. Capersfits less well

Fit is the average pairing score against butter, sugar, flour. Candidates are from the same food group and used in at least 100 recipes.
