Ingredients

Directions

  1. Mix 4 eggs with ½ pound of flour until firm enough to cut smoothly.

  2. Boil the batter in a mold without letting it touch the kettle sides.

  3. Once cooked, turn the pudding out bottom side up and sprinkle with finely sifted sugar.

  4. To clean currants, sprinkle them with flour and rub until separated.

  5. Wash the currants in a pan of water, changing the water until clear.

  6. Dry the currants between clean towels.
