Quince Jelly
Ingredients
Directions
Prepare and stew
Rub off the down from the quinces, core, and cut them into small pieces.
Place the quinces in a preserving kettle with water.
Stew gently until soft, without mashing.
Strain and make the jelly
Put the quinces in a thin muslin bag with the liquid and press lightly.
For each pint of liquid, add a pound of sugar and stir until dissolved.
Boil gently until it sets to a good jelly when cooled on a plate.
Pot
Pour into pots or tumblers and secure when cold.

What each ingredient does
- Quinces
- Supply natural pectin and tartness that help the jelly set and taste bright.
- Sugar
- Sweetens the jelly and, with pectin and acid, helps it set firm.
The step that matters
Boil until the jelly sets. Quince jelly sets because boiling concentrates the sugar and pectin until they form a gel. Stop too early and it stays runny; boil too long and it can turn stiff. Test by cooling a spoonful on a plate.
