Ingredients

Directions

Make the syrup

  1. In a saucepan, combine sugar, water, vinegar (or cream of tartar), and glycerine.

  2. Boil without stirring for 20 to 30 minutes, until it crisps in water.

  3. Just before pouring onto greased platters, add baking soda.

Cool and shape

  1. Pour the mixture onto the platters to cool.

  2. Once partly cool, pour 2 teaspoons of flavoring over the top.

  3. Pull the candy until very white, then shape into sticks or kiss-shaped drops.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Granulated sugar
Forms the main candy structure and sweetness as it cooks and hardens.
Vinegar or cream of tartar
Acid that helps prevent the sugar from crystallising into a grainy texture.
Glycerine
Keeps the candy soft and slows crystallisation, giving a smoother bite.
Baking soda
Reacts with the acid and adds air, lightening the candy's colour and texture when pulled.

The step that matters

Boil without stirring. Stirring a boiling sugar syrup can trigger crystallisation, making the candy grainy instead of smooth. Judging the 20 to 30 minute stage by the water-crisp test matters because the sugar must reach the right concentration to set firm.

Swap the vanilla

How well each one fits the dish's main ingredients (sugar, vinegar):

  1. Vanillathe original
  2. Strawberryfits about as well
  3. Pineapplefits about as well
  4. Apricotfits about as well

Fit is the average pairing score against sugar, vinegar. Candidates are from the same food group and used in at least 100 recipes.
