Sugar Nut Candy

Ingredients

Directions

The book gives no oven temperature. The 250°F in the steps was added when the recipe was transcribed, as a starting point.

Make the candy

  1. In a large pot, combine the sugar, water, and vinegar.

  2. Bring the mixture to a boil over medium heat, stirring until the sugar dissolves.

  3. Add the butter and continue to boil until the mixture reaches the hard ball stage (about 250°F or 121°C).

  4. Stir in the hickory nuts and mix well.

Set and break

  1. Pour the mixture onto a greased surface and let it cool before breaking into pieces.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

White sugar
Forms the candy's sweet, crystalline structure as the syrup cooks and hardens.
Butter
Adds fat and richness, giving the candy a smoother, less brittle bite.
Hickory nuts
Provide crunch and a rich, nutty flavor throughout the candy.
Vinegar
Adds a little acidity that helps prevent the sugar from recrystallizing into grainy candy.

The step that matters

Boiling to the hard ball stage. Sugar syrup must reach about 250°F (121°C) to set firm when cooled. Stopping early leaves it sticky, while overcooking makes it brittle or scorched.

Swap the nuts

How well each one fits the dish's main ingredients (sugar, vinegar, butter):

  1. Almondfits better
  2. Sesamefits better
  3. Soybeanfits better
  4. Nutsthe original

Fit is the average pairing score against sugar, vinegar, butter. Candidates are from the same food group and used in at least 100 recipes.
