Why it works: Celery and pepper match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and cooks put them together in 16,012 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Ingredients

Directions

  1. Clean the clams thoroughly and soak them in water.

  2. In a pot, melt butter and sauté chopped onion and celery until soft.

  3. Add the clams and water, then bring to a boil.

  4. Simmer until the clams open, then remove them and strain the broth.

  5. In a separate pan, make a roux with flour and butter, then gradually add the clam broth and milk.

  6. Season with salt and pepper, then add the clams back to the soup before serving.
