What each ingredient does

Turnips
Provide body and a mild, slightly sweet flavour as they soften in the broth.
Carrots
Add natural sweetness and colour, and thicken the soup as they break down.
Onions
Build a savoury base through gentle frying, adding sweetness and depth.
Butter
Carries flavour and gives the initial frying a rich, smooth fat base.
Leeks
Contribute a mild onion aroma and soft, sweet body to the soup.

The step that matters

Skimming off any scum during the simmer. Long simmering releases foam and impurities from the vegetables. Skimming them off keeps the broth clear and gives it a cleaner taste.
