Steamed Chicken

Why it works: Pepper and nutmeg match in chemistry and in kitchens. They rank in the top 7% of all ingredient pairs, and cooks put them together in 13,015 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Provides the main protein, which cooks through gently in steam.
All-purpose flour
Thickens the gravy so the dressing becomes smooth and clings to the chicken.
Heavy cream
Adds richness and body to the dressing, softening its flavor.
Gravy
Forms the base of the dressing, carrying its savory flavor.

The step that matters

Stir and cook until thickened. Flour must be fully mixed in and heated to thicken the gravy; if it is added unevenly or not cooked long enough, the dressing stays lumpy or tastes raw-floury.

Swap the nutmeg

The recipe marks nutmeg as optional. How well each one fits the dish's main ingredients (chicken, pepper, flour, cream):

  1. Turmericfits about as well
  2. Garlicfits about as well
  3. Nutmegthe original
  4. Tarragonfits about as well

Fit is the average pairing score against chicken, pepper, flour, cream. Candidates are from the same food group and used in at least 100 recipes.
