Chicken Pie

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Stew the chicken until tender, then season and thicken the gravy.

  2. Remove the largest bones and scrape the meat from the neck and backbone.

  3. Line a 4 or 6 quart pudding dish with biscuit dough, about ¼ inch thick.

Assemble

  1. Layer part of the chicken in the dish, adding butter, salt, pepper, and sliced boiled eggs.

  2. Add the remaining chicken and season again.

  3. Include new potatoes if desired.

  4. Pour enough gravy over the mixture to fill the dish.

Bake and serve

  1. Cover with a crust that has a hole in the center the size of a teacup.

  2. Brush the top with beaten egg white.

  3. Bake at 400°F (200°C) for 30 to 45 minutes.

  4. Garnish with small celery leaves arranged in a circle.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Provides the main body of the filling, becoming tender through slow stewing.
Eggs
Sliced boiled eggs add firmness and a mild, rich body to the filling.
Gravy
Moistens the filling and fills the gaps between pieces so the pie stays juicy.
Biscuit dough
Forms the lining and crust that holds the filling and bakes to a tender, golden layer.
Butter
Adds fat and richness to the layered chicken filling.

The step that matters

Pour enough gravy over the mixture to fill the dish. Too little gravy leaves the filling dry once baked, while the starch in the thickened gravy sets as it cools, so the gravy should be thick enough to hold its body without being watery.

Swap the potato

The recipe marks potato as optional. How well each one fits the dish's main ingredients (chicken, pepper, butter, egg, biscuit):

  1. Asparagusfits about as well
  2. Spinachfits about as well
  3. Capsicumfits about as well
  4. Potatothe original

Fit is the average pairing score against chicken, pepper, butter, egg, biscuit. Candidates are from the same food group and used in at least 100 recipes.
