Why it works: Pepper and marjoram match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 2,609 recipes. Both carry estragole, which smells anise, licorice. The science ↓

Ingredients

Directions

The book says “a hot oven”. The 400°F in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Cut the veal into 3-inch squares.

  2. Mix salt pork, bread crumbs, onion, pepper, salt, marjoram, and beaten egg.

  3. Spread the mixture on the veal pieces.

  4. Fold the corners together, securing with skewers.

Bake and serve

  1. Place the veal in a pan with enough gravy or stock to cover the bottom.

  2. Dredge the veal with flour.

  3. Add a small piece of butter on each veal piece.

  4. Bake in a hot oven (400°F / 200°C) until browned on top.

  5. Cook until tender, about 20 minutes.

  6. Serve with horseradish.

What each ingredient does

Veal fillet
Forms the wrapped outer layer that becomes tender when gently cooked in liquid.
Bread crumbs
Absorb egg and juices to bind the stuffing and keep it moist.
Egg
Binds the stuffing so it holds together when wrapped and baked.
Salt pork
Adds fat and savoury flavour that keeps the stuffing moist.
Butter
Adds fat that promotes browning on the top of the veal.
Flour
Coats the surface, helping it brown and thickening the cooking liquid slightly.

The step that matters

Cook until tender, about 20 minutes. Veal fillet is lean and can toughen if overcooked. Cooking it gently in enough liquid, and checking tenderness at the stated time, keeps the meat moist.
