What each ingredient does

Eggs
Form the main body of the pickle, absorbing the spiced vinegar as they rest.
Vinegar
Provides the acidity that preserves the eggs and gives the pickle its sharp flavour.
Mustard seeds
Add pungent, sharp flavour that develops as the seeds soak in the vinegar.
Green peppers
Add fresh, crisp bite and a vegetal note against the rich eggs.

The step that matters

Seal the jar and let it rest 8 to 10 days. Vinegar needs time to penetrate the eggs and mellow the spices. Using them early leaves the flavour sharp and uneven, and the eggs under-seasoned.

Swap the ginger

The recipe marks ginger as optional. How well each one fits the dish's main ingredients (egg, vinegar, white pepper, allspice, mustard, clove, garlic):

  1. Tarragonfits better
  2. Thymefits better
  3. Nutmegfits about as well
  4. Gingerthe original

Fit is the average pairing score against egg, vinegar, white pepper, allspice, mustard, clove, garlic. Candidates are from the same food group and used in at least 100 recipes.
