Curds and Cream

Ingredients

Directions

Curdle and drain

  1. Pour 1 tablespoon of prepared rennet into each quart of milk.

  2. Allow the milk to curdle, then tie the curd loosely in a thin cloth and hang it to drain without wringing or pressing.

Chill and serve

  1. Once drained, place the curd in a mug and set it in cool water, changing the water frequently.

  2. When ready to serve, ladle the curd gently into a deep dish, pour fresh cream over it, and serve with loaf sugar and a nutmeg grater.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Milk
Its proteins set into the curd, forming the body of the dish.
Prepared rennet
An enzyme that clots the milk proteins so they separate into curd and whey.
Fresh cream
Adds richness and fat, giving the curd a softer, smoother mouthfeel.
Loaf sugar
Adds sweetness that balances the mild, savoury-leaning curd.

The step that matters

Draining without wringing or pressing. Squeezing or pressing the curd forces out too much whey and makes it dense and dry. Gentle hanging lets it keep a soft, tender texture.

Swap the nutmeg

How well each one fits the dish's main ingredients (milk, cream, sugar):

  1. Cinnamonfits better
  2. Nutmegthe original
  3. Gingerfits less well
  4. Peppermintfits less well

Fit is the average pairing score against milk, cream, sugar. Candidates are from the same food group and used in at least 100 recipes.
