Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the batter and add structure as they set during boiling.
Beef suet
Adds richness and moisture, keeping the pudding tender as it cooks.
Flour
Forms the stiff paste that holds the pudding together.
Raisins
Add sweetness and moisture, plumping as they absorb liquid during boiling.
Brandy
Adds aroma and flavour to the pudding and sauce.

The step that matters

Tying or molding the mixture tightly. A loose cloth or mold lets water seep in during the long boil, making the pudding soggy and loose. A snug wrap keeps its shape and texture.

Swap the currant

How well each one fits the dish's main ingredients (egg, milk, beef, raisin, sugar, nutmeg, flour):

  1. Vanillafits better
