What each ingredient does

Gravy beef
Gives the liquid its meaty flavour and body as it is pressed and simmered.

The step that matters

Simmer gently after the liquid boils. A hard, vigorous boil toughens the meat and clouds the liquid. A gentle simmer keeps the beef tender and the tea clear.
