Why it works: Pepper and tomato are a kitchen classic. They rank in the top 7% of all ingredient pairs, and cooks put them together in 17,923 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓
Baked Tomatoes
Ingredients
Directions
The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.
Prepare the filling
Preheat the oven to 400°F (200°C).
In a bowl, mix the bread crumbs, butter, chopped onions, pepper, and salt until well combined.
Stuff the tomatoes
Wash the tomatoes and do not remove the skins.
Cut them in half and remove the seeds.
Fill the cavities of the tomato halves with the dressing.
Press the halves together.
Rub the outside of the tomatoes with a little salt and pepper.
Place the tomatoes in a flat pan.
Add a small piece of butter on top of each tomato.
Bake and serve
Bake in the preheated oven until done.
Serve hot.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Tomatoes
- Provide the juicy base that softens and concentrates as it bakes.
- Bread crumbs
- Soak up juices and hold the filling together in the cavities.
- Butter
- Adds richness and helps the tops brown in the oven.
- Onions
- Contribute savoury aroma and mild sweetness once cooked.
The step that matters
Bake in the preheated oven until done. Tomatoes are mostly water, so baking long enough softens the flesh and concentrates flavour, while overbaking can make them collapse and lose their shape.
Swap the tomato
How well each one fits the dish's main ingredients (butter, onion, pepper):
- Potatofits better
- Capsicumfits better
- Chivefits better
- Tomatothe original
Fit is the average pairing score against butter, onion, pepper. Candidates are from the same food group and used in at least 100 recipes.
