Why it works: Allspice and clove match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 7,874 recipes. Both carry estragole, which smells anise, licorice. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Small white onions
- Provide the main body of the pickle, softening slightly while absorbing the spiced vinegar.
- Vinegar
- Provides the acidity that preserves the onions and gives the pickle its sharp flavor.
- Allspice
- Adds warm, aromatic flavor to the pickling vinegar.
- Cloves
- Add strong, aromatic spice flavor to the pickling vinegar.
The step that matters
Let the vinegar cool before sealing the jar. Sealing the jar while the vinegar is still hot can build pressure and create an unsafe seal, and the onions need time to absorb the liquid as it cools.
Swap the onion
How well each one fits the dish's main ingredients (vinegar, allspice, clove):
- Mustardfits better
- Shallotfits better
- Horseradishfits better

Fit is the average pairing score against vinegar, allspice, clove. Candidates are from the same food group and used in at least 100 recipes.
