Puff Paste

Ingredients

• 1 pound butter
• 1 pound flour
• cold water

Directions

1. Weigh the flour and place it in a bowl.

2. Divide the butter into quarters. Cut one quarter into the flour using a knife, without touching it with your hands.

3. Add cold water to form a stiff dough.

4. Flour a surface, turn out the dough, dredge with flour, and roll it thin.

5. Cut another quarter of butter into thin slices and lay it over the paste. Dredge with flour and fold the sides to form a square.

6. Roll the dough to a moderate thickness and add another quarter of butter. Repeat until all the butter is incorporated.

7. Roll the dough to about ½ inch thick, cut it into quarters, and place it on a dish.

8. Set the dish in a very cold place for 2 to 3 hours. If the weather is warm, mix in ice water and place the dough between clean towel folds on ice until hard.
