What each ingredient does

Pineapples
Provide the fruit base and natural flavour that the jam is built around.
Loaf sugar
Sweetens the jam and, as it dissolves and thickens with boiling, helps it set and preserves it.

The step that matters

Boiling with constant stirring. Sugar and fruit must reach a thick, concentrated state, and stirring prevents the sugar and fruit from scorching on the bottom of the pot. Scorching gives a burnt taste and dark colour.
