Vanilla Cake

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the meringue

  1. Whisk the egg whites until stiff and dry.

  2. Gradually add the powdered sugar, one teaspoon at a time.

  3. Stir in the vanilla bean.

Shape and bake

  1. Using a teaspoon, place dollops of the mixture on parchment paper, about the size of a macaroon and ¼ inch apart.

  2. Place the paper on baking sheets and bake in a moderate oven at 350°F (175°C) until delicately baked.

  3. Do not remove from the paper until completely cool.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped into a stiff foam that gives the cakes their light, airy structure.
Powdered sugar
Added gradually to the whipped whites, sweetening them and stabilising the foam.
Vanilla bean
Adds vanilla aroma and flavour throughout the mixture.

The step that matters

Whisking the egg whites until stiff and dry. Under-whipped whites will not hold a stable foam, so the cakes spread flat and lose lightness. Adding sugar gradually helps the foam hold its shape while baking.
