Cocoa-nut Cake

Why it works: Sugar and flour are a kitchen classic. They rank in the top 15% of all ingredient pairs, and cooks put them together in 92,116 recipes. Both carry phenylacetaldehyde, which smells hawthorne, honey. The science ↓

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the coconut

  1. Remove the brown skin from the cocoa-nut.

  2. Wash the cocoa-nut.

  3. Dry the cocoa-nut.

  4. Grate the cocoa-nut.

Shape the cakes

  1. Mix the grated cocoa-nut with the sugar and flour.

  2. Work the mixture together.

  3. Form the mixture into small balls.

  4. Place the balls on baking sheets.

Bake

  1. Bake in a 400°F (200°C) oven, using several layers of paper under the baking sheet to prevent browning on the underside.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cocoa-nut
Forms the bulk of the cake and supplies its coconut flavour and moisture.
Sugar
Adds sweetness and helps the mixture brown in the oven.
Flour
Binds the grated coconut so the mixture holds its shape as balls.

The step that matters

Layering paper under the baking sheet. Without several layers of paper beneath the sheet, the underside of the cakes can brown too quickly, because the direct heat of the baking sheet darkens the base before the tops are set.

Swap the cocoa

How well each one fits the dish's main ingredients (sugar, flour):

  1. Almondfits better
  2. Chestnutfits better
  3. Milletfits better
  4. Cocoathe original

Fit is the average pairing score against sugar, flour. Candidates are from the same food group and used in at least 100 recipes.
