Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 350°F (175°C).

Make and shape the loaf

Bake

  1. Bake for 2 hours until cooked through.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Forms the body of the loaf and provides the main meaty structure.
Salt pork
Adds fat that keeps the loaf moist and flavorful during baking.
Bread
Absorbs liquid and fat, helping the loaf stay tender rather than dense.
Eggs
Egg yolks bind the mixture, and the beaten white gives the top a glossy finish.

The step that matters

Mix until all ingredients are combined. Even distribution of bread, fat and egg through the ground meat helps the loaf bind and cook evenly, so it holds its shape when sliced.

Swap the onion

How well each one fits the dish's main ingredients (veal, pork, bread, egg, sage, pepper):

  1. Capsicumfits better
  2. Asparagusfits better
  3. Tomatofits better
  4. Onionthe original

Fit is the average pairing score against veal, pork, bread, egg, sage, pepper. Candidates are from the same food group and used in at least 100 recipes.
