Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Form the bulk of the croquette, giving a soft interior that holds its shape when pressed and shaped.
Egg yolk
Binds the potato mixture together so the croquettes hold their shape while frying.
Bread crumbs
Form a crisp, golden coating that browns in the hot oil.

The step that matters

Let the potatoes cool before adding the egg yolk. If the potatoes are still hot, the beaten yolk can scramble or cook unevenly, and the mixture becomes loose and hard to shape. Cooling slightly keeps it firm and smooth enough to form into croquettes.
