Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Corn meal
Provides the bulk and coarse, crumbly texture of the bread.
Graham flour
Adds structure and a nutty, wholesome flavor to the loaf.
Baking soda
Reacts with the acidic molasses to produce gas that lightens the bread.
Molasses
Adds sweetness, dark color, and moisture to the bread.
Sweet milk
Hydrates the dry ingredients into a batter and adds moisture.

The step that matters

Steam for five hours. Long, gentle steaming cooks the dense batter through and sets its moist, even crumb. Keeping the mold sealed and the water simmering prevents the loaf from drying out or turning gummy.
