Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Rice
Its starch swells and thickens the liquid as it cooks, giving the pudding body.
Milk
Cooks slowly with the rice and sets into a soft, creamy custard-like texture.
Cream
Adds fat for richness and a smoother, silkier mouthfeel.
Sugar
Sweetens the pudding and balances the citrus.
Orange juice
Adds acidity that brightens the sweetness of the pudding.
Orange rind
Adds fragrant citrus aroma from the oils in the peel.

The step that matters

Cook over gently boiling water in the double boiler. Indirect steam heat warms the rice and milk slowly and evenly. Direct high heat would scorch the milk on the base and cause sticking, so the pot should not sit over a hard boil.

Swap the orange

How well each one fits the dish's main ingredients (rice, milk, cream, sugar):

  1. Vanillafits better
  2. Coconutfits better
  3. Strawberryfits better
  4. Orangethe original

Fit is the average pairing score against rice, milk, cream, sugar. Candidates are from the same food group and used in at least 100 recipes.
