Fruit Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare

  1. Preheat the oven to 350°F (175°C).

Make the batter

  1. In a large bowl, cream together the brown sugar and butter until light and fluffy.

  2. Beat in the eggs one at a time, mixing well after each addition.

  3. Stir in the currants, chopped citron, grated nutmeg, wine or brandy, and mixed spices.

  4. Pour the batter into a greased cake pan.

Bake

  1. Bake for about 1.5 to 2 hours, or until a toothpick inserted in the center comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Creams with sugar to trap air, giving a tender, rich crumb.
Eggs
Bind the batter and add structure and moisture as the cake sets.
Brown sugar
Adds sweetness and moisture, and helps the crumb brown.
Currants
Add fruit bulk, sweetness and chewy texture throughout the cake.
Citron
Adds candied fruit flavor and chewy texture throughout the cake.

The step that matters

Beating in the eggs one at a time. Adding eggs gradually lets each one emulsify fully into the creamed butter and sugar. Adding them too fast can curdle the batter, which may lead to a coarser, denser crumb.

Swap the currant

How well each one fits the dish's main ingredients (sugar, butter, egg, nutmeg, wine):

  1. Lemonfits better
  2. Vanillafits better
  3. Figfits better
  4. Currantthe original

Fit is the average pairing score against sugar, butter, egg, nutmeg, wine. Candidates are from the same food group and used in at least 100 recipes.
