Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Ripe tomatoes
Provide the bulk and body of the sauce as they break down during cooking.
Onions
Add savoury depth and aroma as they soften and sweeten while cooking.
Brown sugar
Adds sweetness and helps the sauce thicken and darken as it cooks.
Vinegar
Adds acidity that gives the chutney its tang and helps preserve it.

The step that matters

Cook until thickened. The sauce thickens as water evaporates and the sugar and vegetables concentrate. Stopping too early leaves it thin and watery, while cooking too long can scorch the sugar on the bottom of the pot.

Swap the onion

How well each one fits the dish's main ingredients (tomato, pepper, sugar, vinegar):

  1. Capsicumfits better
  2. Cucumberfits better
  3. Mustardfits better
  4. Onionthe original
