Ingredients

Directions

Prepare the gelatin

  1. Dissolve the gelatin in 2 cups cold water.

Make the mixture

  1. Whip the cream until very stiff.

  2. Whip the egg whites until stiff peaks form.

  3. Mix the whipped cream and egg whites together.

  4. Slowly stir in the sugar.

  5. Gradually add the dissolved gelatin while whipping vigorously.

  6. If desired, remove part of the mixture and stir in coloring.

Mold and set

  1. Quickly pour into molds before it begins to set.

  2. If it's cold, it will set quickly; if warm, place in the icebox near the ice.

What each ingredient does

Gelatin
Sets the whipped mixture into a firm, sliceable structure as it cools.
Rich cream
Whipped to form a light, airy foam that gives the dessert its richness and body.
Egg whites
Whipped to stiff peaks to trap air, adding lightness and volume.
Granulated sugar
Sweetens the mixture and helps stabilise the whipped egg whites.
Sherry or wine
Adds flavour and aroma to the dessert.

The step that matters

Adding the gelatin while whipping. Gelatin begins to set as it cools, so it must be added gradually while whipping vigorously to distribute evenly. Poured in lumps or while it is already setting, it leaves uneven, rubbery pockets instead of a smooth, light texture.
