Meat Loaf

Oven, in the book's wordsA moderate oven

Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the loaf

  1. In a mixing bowl, combine the chopped beef, suet, onion, salt, and pepper.

  2. Add the bread crumbs and moisten with the beaten eggs; mix well.

  3. Shape the mixture into a loaf, adding flour as needed to hold it together.

Bake and serve

  1. Bake in a preheated oven at 350°F (175°C) for about 35 minutes, brushing with melted butter.

  2. In a pan, melt the butter and add the mushrooms, seasoning with salt and pepper.

  3. Cover and simmer the mushrooms for 20 minutes.

  4. Pour the mushroom mixture over the meat loaf and serve hot.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lean beef
Provides the main meaty structure and rich flavor of the loaf.
Suet
Adds fat that keeps the loaf moist and tender as it bakes.
Eggs
Bind the mixture together and help it hold its shape when cooked.
Bread crumbs
Absorb moisture and soften the texture so the loaf stays tender.
Butter
Adds richness and helps brown the surface of the loaf.

The step that matters

Shaping the loaf. The mixture is soft and loose, so flour should be added only as needed to hold it together. Too little binding lets the loaf fall apart, while too much flour makes it dry and dense.

Swap the onion

How well each one fits the dish's main ingredients (beef, pepper, bread, egg, flour, butter, mushroom):

  1. Shallotfits better
  2. Asparagusfits better
  3. Chivefits better
  4. Onionthe original

Fit is the average pairing score against beef, pepper, bread, egg, flour, butter, mushroom. Candidates are from the same food group and used in at least 100 recipes.
