Why it works: Pepper and sage match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 5,388 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Jellied Veal

Ingredients

Directions

Cook the veal

  1. Wash the veal and place it in boiling water to cover.

  2. Boil rapidly for about 20 minutes, then simmer until the meat is tender.

  3. Cool the veal in the cooking water, reducing it to just enough to moisten the meat.

Assemble and chill

  1. Chop the cooled veal finely and season with salt, pepper, and sage or onion.

  2. Mix the seasoned meat with the stock.

  3. Layer the mixture in a mold, alternating with slices of hard-boiled egg until full.

  4. Put the mold on ice and serve cold in slices.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Provides the meat that sets into a firm, sliceable body when cooled.
Stock from cooking veal
Supplies gelatin and moisture so the chopped meat binds and sets into a jelly.
Hard-boiled eggs
Add firm, pale slices that create a visible layered pattern and mild richness.

The step that matters

Reducing the cooking liquid. Too much liquid leaves the chopped meat soupy and unable to hold its shape, while too little leaves it dry. Enough liquid to just moisten the meat lets the natural gelatin in the stock set it firmly when chilled.

Swap the sage

How well each one fits the dish's main ingredients (veal, pepper, egg):

  1. Parsleyfits better
  2. Sagethe original
  3. Tarragonfits about as well
  4. Nutmegfits about as well

Fit is the average pairing score against veal, pepper, egg. Candidates are from the same food group and used in at least 100 recipes.
