  1. Boil the lean meat until tender, then chop it very fine.

  2. Chop the apples and add them to the meat.

  3. Add the chopped suet, raisins, and currants to the mixture.

  4. Stir in the cinnamon, nutmeg, cloves, and mace.

  5. Sweeten the mixture to taste with brown sugar.

  6. Pour in the cider and brandy, and mix well.
