What each ingredient does

White beans
Form the body of the soup once cooked and pureed into a smooth base.
Baking soda
Softens the bean skins so the beans cook more evenly and become tender.
Butter
Adds richness and a smooth, rounded mouthfeel to the finished soup.
Milk
Thins the puree to the desired consistency and adds creaminess.

The step that matters

Watch carefully to prevent sticking and scorching. Beans are dense and starchy, so they settle and stick to the bottom of the pot as they simmer. Scorched starch gives a burnt flavour that spreads through the whole soup, so stir regularly and keep the heat gentle.

Swap the beans

How well each one fits the dish's main ingredients (pepper, butter, milk):

  1. Cocoafits better
  2. Walnutfits about as well
  3. Lima beansfits about as well
  4. Beansthe original

Fit is the average pairing score against pepper, butter, milk. Candidates are from the same food group and used in at least 100 recipes.
