Why it works: Sugar and syrup match in chemistry and in kitchens. They rank in the top 6% of all ingredient pairs, and cooks put them together in 5,842 recipes. Both carry ethanol, which smells alcoholic, ethereal. The science ↓

Strawberry Preserves

Ingredients

Directions

Prepare the jars

  1. Pick over, wash, drain, and hull the strawberries.

  2. Fill jars with the berries.

  3. Make a syrup with a sugar concentration of 30 degrees.

  4. Add syrup to the fruit until jars overflow; let stand for 15 minutes.

  5. Add more fruit to fill the jars as the fruit shrinks.

Seal and process

  1. Screw on the covers loosely.

  2. Place jars in a kettle of cold water, heat to boiling, and maintain just below boiling for 1 hour.

What each ingredient does

Strawberries
Provide the fruit, flavor, and most of the texture of the preserves.
Sugar
Sweetens the fruit and, at high concentration, helps preserve it by binding water.

The step that matters

Keeping the water just below boiling. A hard rolling boil can jostle jars and push syrup out, while loose covers let air escape and allow a proper seal to form during processing.
