What each ingredient does

Gelatine
Sets the liquid into a firm, sliceable jelly once it cools.
Tomato
Provides the main flavour and liquid base of the aspic.
Vinegar
Adds acidity that brightens the tomato flavour.

The step that matters

Dissolve the gelatine fully. Gelatine must dissolve completely into the warm liquid; any undissolved granules leave soft spots and weaken the set. Stirring until clear ensures an even, firm aspic.

Swap the clove

How well each one fits the dish's main ingredients (tomato, celery, onion, vinegar):

  1. Garlicfits better
  2. Tarragonfits better
  3. Thymefits better
  4. Clovethe original

Fit is the average pairing score against tomato, celery, onion, vinegar. Candidates are from the same food group and used in at least 100 recipes.
