Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the cucumbers

  1. Pare the cucumbers and cut them in half lengthwise.

  2. Boil the cucumber halves gently in salted water for 6 minutes.

  3. Dry the cucumbers on a towel.

Stuff and bake

  1. Fill the halves with the stuffing; moisten with stock if too dry.

  2. Cover the stuffed cucumbers with buttered crumbs.

  3. Place them in a baking pan.

  4. Surround the pan with cucumber water.

  5. Bake in a slow oven at 300°F (150°C) for 40 minutes.

Serve

  1. Serve with well-seasoned sauce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cucumbers
Form the edible shell that holds the stuffing and softens when boiled and baked.
Soft bread crumbs
Bind the stuffing and absorb moisture so it stays tender rather than watery.
Cold meat
Supplies the savory, substantial filling that gives the stuffing body.
White sauce or stock
Adds moisture to the stuffing and flavour to the sauce served alongside.
Butter
Browns the buttered crumb topping and adds richness.

The step that matters

Dry the cucumbers before stuffing. Surface water left on the boiled cucumber halves dilutes the filling and loosens the crumb topping, so patting them dry on a towel helps the stuffing hold its shape and the top brown.

Swap the cucumber

How well each one fits the dish's main ingredients (onion, bread, parsley, meat, sauce, butter):
