Why it works: Lemon and pepper match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 27,047 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

Ingredients
Directions
The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.
Prepare the meat
Wipe the veal, remove skin and membrane, and chop finely or grind through a meat chopper.
Mix and shape
Add the finely chopped pork, crushed crackers, lemon juice, salt, pepper, onion juice, cream, and beaten eggs. Mix well.
Press into a loaf shape or pack into a small bread pan. Smooth the top. Brush with egg white.
Bake and serve
Bake at 300°F (150°C) for 2½ hours, basting frequently.
Remove from the pan when cold. Serve cut into thin slices.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Veal
- Forms the main body of the loaf, giving it its meaty structure and texture.
- Eggs
- Bind the mixture and help it set firm as the loaf bakes.
- Salt pork
- Adds fat and moisture, keeping the lean veal from drying out during baking.
- Crackers
- Absorb liquid and help hold the loaf together and tender.
- Cream
- Adds moisture and richness, keeping the loaf soft and tender.
The step that matters
Baking low and basting. Slow baking at a moderate temperature sets the proteins gently, so the loaf stays moist rather than tough and dry. Frequent basting keeps the surface from drying out over the long bake.
Swap the onion
How well each one fits the dish's main ingredients (veal, lemon, pork, pepper, egg, cream):
- Spinachfits better
- Asparagusfits better
- Capsicumfits better
- Onionthe original
Fit is the average pairing score against veal, lemon, pork, pepper, egg, cream. Candidates are from the same food group and used in at least 100 recipes.
