What each ingredient does

Gelatine
Sets the liquid mixture into a firm, sliceable pudding structure.
Egg whites
Trap air when beaten, giving the pudding its light, snowy texture.
Sugar
Adds sweetness and helps dissolve the gelatine in the hot syrup.
Shredded coconut
Adds chewy texture and coconut flavour throughout the pudding.

The step that matters

Gently folding in the beaten egg whites. Egg whites hold air only while they are whipped. Folding them in gently keeps that trapped air, so the pudding stays light and snowy instead of collapsing into a dense mass.
